These Stuffed Mushrooms with Bacon are an easy party appetizer everyone will love. The cheesy filling is so delicious, a guaranteed crowd pleaser!
I cannot resist a good stuffed mushroom. And while I seriously love a cream cheese filled one, I also seriously love a cheesy, bacon-y, decadent stuffed mushroom.
I make these so often – for a lazy Football Sunday, for Thanksgiving, Christmas, New Year’s Eve… Even for Easter or a bridal shower! These little mushrooms vanish fast, because honestly: Who doesn’t love bacon?!
Ingredients you’ll need
This is just an overview of the ingredients needed – scroll to the recipe card at the bottom for exact quantities and instructions.
Ingredient notes
- Mushrooms: I always use brown button mushrooms for these, but feel free to use white button mushrooms instead.
- Bacon: I use cut bacon I cook myself, because I like the flavor the bacon grease adds. Feel free to just use real bacon bits to make the recipe even easier.
- Breadcrumbs: I use plain, but feel free to use Italian seasoned if you prefer. I don’t really like the Italian seasoning with the bacon and cheddar, so you might want to swap the cheddar for parmesan? Just my thoughts.
Step by step photos
Start by prepping the mushrooms. Remove the stems and set the caps aside. Finely chop the stems.
Then, cook the bacon (if you’re using raw bacon) in a large skillet until browned. Stir in the butter, chopped mushrooms stems and diced onion and cook until softened, about 5 minutes.
Take the skillet off the heat and add in the breadcrumbs, cheese and seasoning.
Stir the filling well, then try a little! At this point, you’ll want to taste the filling and add salt and pepper to taste to make sure it’s perfect.
Then, stuff those mushroom caps! You’ll want to get enough filling in each so it’s heapingly stuffed.
Either use a teaspoon measure, or your hands if you don’t mind getting them a little dirty. In either case, make sure to push the filling into the caps to make sure it doesn’t fall out.
And then bake the mushrooms until they’re soft and the filling is bubbly. Serve them hot or warm, that’s when they taste best!
Recipe tips
- Make sure to check the filling for seasoning. The amount of seasoning you need to add greatly depends on your exact bacon, cheese and spices used. I always have to add a little salt and pepper to mine to make it taste amazing.
- Stuff the filling well into the mushrooms, else it may fall off during baking.
- Make sure to cook the bacon until browned and crispy, that’s how you get the most flavor!
